    Réalisation d’essais en laboratoire qui reproduisent les conditions de transformation industrielle afin d’évaluer et de comparer le comportement et l’effet des différents ingrédients texturisants d’origine végétale et d’algues dans les boissons laitières et végétales, et le suivi rhéologique ultérieur des échantillons produits. Sur la base des informations obtenues lors des essais, une nouvelle ligne de stabilisateurs et de produits texturisants pour le lait et les boissons végétales peut être conçue. (French)
