    ENTRE LAS TECNOLOGIAS DE ENVASADO ACTIVO DE ALIMENTOS BASADAS EN LA LIBERACION DE SUSTANCIAS ACTIVAS SE ENCUENTRA EL ENVASADO ANTIMICROBIANO. SU PROPOSITO ES MODULAR LA LIBERACION DE AGENTES EN EL ALIMENTO O EN LA ATMOSFERA QUE LO RODEA A TRAVES DEL ENVASE, DE FORMA QUE LOGRE INHIBIR LA PROLIFERACION DE MICROORGANISMOS DURANTE LA VIDAD UTIL DEL PRODUCTO. ESTA TECNOLOGIA RESULTA MUY ATRACTIVA PARA LA INDUSTRIA ALIMENTARIA YA QUE PERMITE SER COMBINADA CON OTRAS TECNOLOGIAS DE CONSERVACION MENOS AGRESIVAS QUE LAS CONVENCIONALES PARA OBTENER PRODUCTOS DE ELEVADA CALIDAD, MICROBIOLOGICAMENTE SEGUROS Y ALARGAR SU VIDA UTIL. SIN EMBARGO, ACTUALMENTE ES ESCASA LA COMERCIALIZACION DE ESTE TIPO DE ENVASES YA QUE PRESENTA UNA SERIE DE DIFICULTADES CIENTIFICAS Y TECNOLOGICAS A SUPERAR PARA QUE ESTA TECNOLOGIA SE CONSOLIDE INDUSTRIALMENTE. DICHAS DIFICULTADES DERIVAN BASICAMENTE DE LA BAJA ESTABILIDAD QUE PRESENTAN LOS AGENTES ACTIVOS DURANTE EL PROCESADO DEL PLASTICO Y DEL CORRECTO CONTROL DE LA LIBERACION DE LOS MISMOS PARA QUE MANTENGAN UNA CONCENTRACION EFECTIVA Y SOSTENIDA DURANTE LA COMERCIALIZACION DEL PRODUCTO. POR OTRO LADO, DEBE DE EXISTIR UN MECANISMO QUE PROVOQUE LA LIBERACION DEL AGENTE PARA QUE ESTA SE PRODUZCA CUANDO SE REQUIERA Y NO INMEDIATAMENTE TRAS EL PROCESADO DEL POLIMERO Y QUE, DE ESTA FORMA, PUEDAN EJERCER SU ACTIVIDAD DURANTE LA ETAPA DE ENVASADO Y ALMACENAMIENTO. POR ULTIMO, LOS MATERIALES DESARROLLADOS DEBERIAN DE PODER INCORPORARSE DE FORMA SENCILLA Y EFICAZ EN EL ENVASE, PREFERENTEMENTE INTEGRANDOSE EN SU ESTRUCTURA. _x000D_ CON ESTE PROYECTO SE PRETENDE AFRONTAR DICHAS DIFICULTADES MEDIANTE EL DESARROLLO DE POLIMEROS DINAMEROS BASADOS EN EL ANCLAJE COVALENTE REVERSIBLE DE MOLECULAS ANTIMICROBIANAS, EN PRINCIPIO ALDEHIDOS VOLATILES NATURALES APROBADOS PARA USO ALIMENTARIO, DE FORMA QUE PUEDAN PERMANECER RETENIDAS EN EL POLIMERO POR UN TIEMPO INDEFINIDO Y SER LIBERADAS ANTE LA ACCION DE UN ESTIMULO EXTERNO COMO PUEDA SER UN CAMBIO DE PH EN EL MEDIO, TEMPERATURA, LUZ, ETC. POR LO TANTO LOS POLIMEROS DESARROLLADOS SE COMPORTARIAN COMO POLIMEROS INTELIGENTES QUE RESPONDEN A ESTIMULOS EXTERNOS. EL DESARROLLO Y APLICACION DE ESTE TIPO DE POLIMEROS FUNCIONALES PERMITE ABORDAR EL DISEÑO DE ENVASES ANTIMICROBIANOS DESDE UNA NOVEDOSAPERSPECTIVA._x000D_ EN PRINCIPIO SE VAN A EMPLEAR LOS CONCEPTOS DE ¿GREEN CHEMISTRY¿ Y LA ¿QUIMICA DEL CLICK¿ PARA PODER OBTENER DE FORMA SENCILLA, RAPIDA, EFICIENTE Y SIN EL EMPLEO DE SOLVENTES TOXICOS NUEVOS ENLACES COVALENTES DE CARACTER REVERSIBLE, PARA ELLO SE VA A TRABAJAR CON POLIMEROS NATURALES Y SINTETICOS QUE TENGAN GRUPOS QUIMICOS SUSCEPTIBLES DE SER MODIFICADOS COMO GRUPOS AMINO PRIMAROS E HIDROXILO, PARA LA FORMACION DE BASES DE SCHIFF Y ACETALES, RESPECTIVAMENTE, QUE SON FACILMENTE HIDROLIZADOS A PH LIGERAMENTE ACIDOS. LA SINTESIS DE LOS ENLACES Y PELICULAS SE REALIZARA POR VIA HUMEDA O POR VIA SECA MEDIANTE EXTRUSION REACTIVA. SE ESTUDIARA LA ESTABILIDAD DE LOS MATERIALES Y LAS CONDICIONES EN QUE SE PRODUCE LA REVERSION DEL ENLACE Y LA LIBERACION DEL AGENTE._x000D_ SEGUIDAMENTE SE CARACTERIZARAN LAS PROPIEDADES FUNCIONALES Y LA ACTIVIDAD ANTIMICROBIANA IN VITRO Y CON MATRICES ALIMENTARIAS DE LOS MATERIALES DESARROLLADOS. FINALMENTE LOS MATERIALES MAS EFECTIVOS SE INCORPORARAN AL DISEÑO DE ENVASES Y SE PROBARA SU EFECTIVIDAD EN EL ENVASADO DE DIFERENTES TIPOS DE ALIMENTOS. ESTE PROYECTO INCLUYE UNA ULTIMA PARTE EN LA QUE SE PROBARA LA SEGURIDAD TOXICOLOGICA DE LOS MATERIALES DESARROLLADOS. (Spanish)

    ANTIMICROBIAL PACKAGING IS ONE OF THE FOOD ACTIVE PACKAGING TECHNOLOGIES THAT ARE BASED ON THE RELEASE OF ACTIVE SUBSTANCES. ITS PURPOSE IS TO MODULATE THE RELEASE OF AGENTS FROM THE PACKAGING TO THE FOOD OR THE ATMOSPHERE AROUND IT SO THAT IT SUCCEEDS IN INHIBITING THE PROLIFERATION OF MICROORGANISMS DURING THE SHELF LIFE OF THE PRODUCT. THIS TECHNOLOGY IS VERY ATTRACTIVE FOR THE FOOD INDUSTRY BECAUSE IT CAN BE COMBINED WITH OTHER PRESERVATION TECHNOLOGIES THAT ARE LESS AGGRESSIVE THAN THE CONVENTIONAL ONES IN ORDER TO OBTAIN PRODUCTS THAT ARE OF HIGH QUALITY AND MICROBIOLOGICALLY SAFE AND TO EXTEND THEIR SHELF LIFE. HOWEVER, AT PRESENT THERE IS LITTLE MARKETING OF THIS KIND OF PACKAGING BECAUSE IT PRESENTS A SERIES OF SCIENTIFIC AND TECHNOLOGICAL DIFFICULTIES THAT MUST BE OVERCOME IF THIS TECHNOLOGY IS TO BE ESTABLISHED INDUSTRIALLY. THE DIFFICULTIES DERIVE BASICALLY FROM THE LOW STABILITY OF THE ACTIVE AGENTS DURING THE PROCESSING OF THE PLASTIC AND THE PROBLEM OF ACHIEVING CORRECT CONTROL OF THE RELEASE OF THE AGENTS SO THAT THEY MAINTAIN A SUSTAINED EFFECTIVE CONCENTRATION DURING THE MARKETING OF THE PRODUCT. A FURTHER DIFFICULTY IS THAT THERE MUST BE A MECHANISM THAT TRIGGERS THE RELEASE OF THE AGENT, SO THAT THE RELEASE OCCURS WHEN IT IS REQUIRED AND NOT IMMEDIATELY AFTER THE PROCESSING OF THE POLYMER, ALLOWING THE AGENT TO EXERT ITS ACTIVITY DURING THE PACKAGING AND STORAGE OF THE PRODUCT. FINALLY, THE WAY IN WHICH THE MATERIALS THAT ARE DEVELOPED ARE INCORPORATED IN THE PACKAGING MUST BE EASY AND EFFECTIVE, PREFERABLY BY INTEGRATING THEM IN ITS STRUCTURE._x000D_ THIS PROJECT AIMS TO TACKLE THESE DIFFICULTIES BY DEVELOPING DYNAMIC POLYMERS BASED ON THE REVERSIBLE COVALENT ANCHORING OF ANTIMICROBIAL MOLECULES, IN PRINCIPLE NATURAL VOLATILE ALDEHYDES APPROVED FOR FOOD USE, SO THAT THEY CAN BE RETAINED IN THE POLYMER FOR AN INDEFINITE TIME AND BE RELEASED IN RESPONSE TO THE ACTION OF AN EXTERNAL STIMULUS SUCH AS A CHANGE IN THE PH OF THE MEDIUM, TEMPERATURE, LIGHT, ETC. THUS THE POLYMERS THAT ARE DEVELOPED WILL BEHAVE AS SMART POLYMERS THAT RESPOND TO EXTERNAL STIMULI. THROUGH THE DEVELOPMENT AND APPLICATION OF FUNCTIONAL POLYMERS OF THIS KIND IT IS POSSIBLE TO UNDERTAKE THE DESIGN OF ANTIMICROBIAL PACKAGING FROM A NEW PERSPECTIVE._x000D_ IN PRINCIPLE, THE CONCEPTS OF ¿GREEN CHEMISTRY¿ AND ¿CLICK CHEMISTRY¿ WILL BE USED IN ORDER TO REVERSIBLE COVALENT BONDS EASILY, QUICKLY, EFFICIENTLY AND WITHOUT THE USE OF TOXIC SOLVENTS. FOR THIS PURPOSE WE WILL WORK WITH NATURAL AND SYNTHETIC POLYMERS THAT HAVE CHEMICAL GROUPS THAT CAN BE MODIFIED, SUCH AS PRIMARY AMINE GROUPS AND HYDROXYL GROUPS, FOR THE FORMATION OF SCHIFF BASES AND ACETALS, RESPECTIVELY, WHICH ARE EASILY HYDROLYSED AT A MILDLY ACID PH. THE SYNTHESIS OF THE BONDS AND FILMS WILL BE PERFORMED USING A WET PROCESS OR A DRY PROCESS INVOLVING REACTIVE EXTRUSION. A STUDY WILL BE MADE OF THE STABILITY OF THE MATERIALS AND THE CONDITIONS IN WHICH THE REVERSAL OF THE BOND AND THE RELEASE OF THE AGENT TAKE PLACE._x000D_ THE FUNCTIONAL PROPERTIES AND THE ANTIMICROBIAL ACTIVITY OF THE MATERIALS DEVELOPED WILL THEN BE CHARACTERIZED IN VITRO AND WITH FOOD MATRICES. FINALLY, THE MOST EFFECTIVE MATERIALS WILL BE INCORPORATED IN THE DESIGN OF PACKAGING, AND THEIR EFFECTIVENESS WILL BE TESTED IN THE PACKAGING OF VARIOUS KINDS OF FOODS. THE PROJECT INCLUDES A FURTHER PART, IN WHICH THE TOXICOLOGICAL SAFETY OF THE MATERIALS DEVELOPED WILL BE TESTED. (English)
