    LA FORTIFICACION ALIMENTARIA CON HIERRO PUEDE SER CONSIDERADA COMO UNA DE LAS ESTRATEGIAS MAS RENTABLES A LARGO PLAZO PARA REDUCIR LA PREVALENCIA DE DEFICIENCIA EN HIERRO Y LA ANEMIA FERROPENICA ASOCIADA. A NIVEL MUNDIAL, MAS DE DOS BILLONES DE PERSONAS ESTAN AFECTADAS POR ESTA ALTERACION, SIENDO CONSIDERADA COMO LA ENFERMEDAD CARENCIAL MAS IMPORTANTE EN EL MUNDO. LA PREVALENCIA ES ESPECIALMENTE ELEVADA EN NIÑOS DE 6 MESES DE EDAD EN ADELANTE. EL EXITO DE LOS PROGRAMAS DE FORTIFICACION CON HIERRO NO SOLO DEPENDE DEL TIPO DE ALIMENTO SINO TAMBIEN DE LA FORMA MINERAL EMPLEADA. DE ELLA DEPENDERAN LOS MECANISMOS DE ABSORCION INTESTINAL ASI COMO LAS POSIBLES INTERACCIONES CON INHIBIDORES DE LA ABSORCION PRESENTES EN LA DIETA. CON EL OBJETIVO DE PREVENIR LA DEFICIENCIA DE HIERRO Y LA ANEMIA, ES NECESARIA UNA ESTRATEGIA COMBINADA ENTRE LA INDUSTRIA ALIMENTARIA, INVESTIGADORES Y PROFESIONALES DE LA SALUD. DADO QUE LOS CEREALES SON GENERALMENTE LA PRIMERA OPCION PARA LA ALIMENTACION COMPLEMENTARIA EN LOS NIÑOS, ESTOS DEBEN SER CONSIDERADOS COMO UNA DE LAS PRINCIPALES OPCIONES PARA LA FORTIFICACION CON HIERRO. DEBIDO A SU ESTABILIDAD QUIMICA Y A SU BAJO COSTE, LA PRINCIPAL FUENTE EMPLEADA EN LA FORTIFICACION ES EL HIERRO ELECTROLITICO. SIN EMBARGO, HA MOSTRADO UNA BAJA DISPONIBILIDAD MINERAL, ESPECIALMENTE AL COMPARARLO CON OTRAS FUENTES COMO EL SULFATO FERROSO, CONSIDERADO COMO ESTANDAR ATRIBUYENDOLE UN 100% DE DISPONIBILIDAD RELATIVA. OTRAS ALTERNATIVAS PARA LA FORTIFICACION QUE DEBERIAN SER CONSIDERADAS SON EL FUMARATO FERROSO Y EL PIROFOSFATO FERRICO MICRONIZADO ENCAPSULADO. PARA EL FUMARATO FERROSO SE HA DEMOSTRADO UNA ABSORCION EFICIENTE EN MEDIO ACIDO. EN EL CASO DEL PIROFOSFATO, SE TRATA DE UNA NUEVA FUENTE DE HIERRO CON UN PEQUEÑO TAMAÑO Y PROPIEDADES ANTI-AGREGANTES. SIN EMBARGO, ES NECESARIO DISPONER DE EVIDENCIAS CIENTIFICAS QUE PERMITAN ELUCIDAR SU ADECUACION PARA LA FORTIFICACION EN CEREALES INFANTILES. PARALELAMENTE A LA BIODISPONIBILIDAD DE ESTAS FUENTES DE HIERRO, SE DEBERIA CONSIDERAR SU EFECTO SOBRE LA MICROBIOTA INTESTINAL. EL MANTENIMIENTO DE UNA MICROBIOTA SALUDABLE DESDE LAS PRIMERAS ETAPAS DE LA VIDA PUEDE AYUDAR A LA PREVENCION DE ENFERMEDADES CRONICAS EN LA VIDA ADULTA, PERO TAMBIEN A PREVENIR ENFERMEDADES INFECCIOSAS COMO LAS DIARREAS CAUSADAS POR ENTEROBACTERIAS PATOGENAS, ESPECIALMENTE EN PAISES EN VIAS DE DESARROLLO._x000D_ EN ESTE PROYECTO SE PRETENDE SELECCIONAR UNA FUENTE DE HIERRO DE ELEVADA BIODISPONIBILIDAD, QUE PUEDA SER UTILIZADA EN CEREALES INFANTILES. SE ESTUDIARA SU ABSORCION TANTO EN LINEAS CELULARES HUMANAS COMO EN CERDOS DESTETADOS. SE PRETENDE PROFUNDIZAR EN LOS MECANISMOS DE ABSORCION DE ESTE MINERAL ESTUDIANDO NIVELES DE EXPRESION GENICA Y LOCALIZACION DE TRANSPORTADORES, ENZIMAS Y PROTEINAS QUE INTERVIENEN EN ESTE PROCESO. PERO EL ASPECTO MAS INNOVADOR DE ESTE ESTUDIO SE CENTRA EN EL POSIBLE EFECTO QUE PUDIERAN TENER LAS DISTINTAS FORMAS QUIMICAS DE HIERRO SOBRE LA MICROBIOTA INTESTINAL. PARA ELLO ESTUDIAREMOS LAS MODIFICACIONES DE LOS DIFERENTES GRUPOS MICROBIANOS EN CERDOS DESTETADOS ALIMENTADOS CON LOS DISTINTOS FORTIFICANTES, ASI COMO EN UN MODELO CONTINUO DE DIGESTION GASTROINTESTINAL IN VITRO (SHIME), EN EL QUE UN INOCULO FECAL DE LACTANTE SE INCUBARA CON EL ALIMENTO DIGERIDO, PUDIENDO MONITORIZAR LOS CAMBIOS DINAMICOS QUE OCURREN EN LOS DISTINTOS COMPARTIMENTOS INTESTINALES.     FOOD FORTIFICATION WITH IRON CAN BE CONSIDERED ONE OF THE MOST PROFITABLE LONG-TERM STRATEGIES TO REDUCE THE PREVALENCE OF IRON DEFICIENCY AND ASSOCIATED FERROPENIC ANEMIA. WORLDWIDE, MORE THAN TWO BILLION PEOPLE ARE AFFECTED BY THIS CHANGE, BEING CONSIDERED THE MOST IMPORTANT DEFICIENCY DISEASE IN THE WORLD. PREVALENCE IS PARTICULARLY HIGH IN CHILDREN AGED 6 MONTHS AND OLDER. THE SUCCESS OF IRON FORTIFICATION PROGRAMS DEPENDS NOT ONLY ON THE TYPE OF FOOD BUT ALSO ON THE MINERAL FORM USED. IT WILL DEPEND ON THE MECHANISMS OF INTESTINAL ABSORPTION AS WELL AS THE POSSIBLE INTERACTIONS WITH ABSORPTION INHIBITORS PRESENT IN THE DIET. IN ORDER TO PREVENT IRON DEFICIENCY AND ANAEMIA, A COMBINED STRATEGY BETWEEN THE FOOD INDUSTRY, RESEARCHERS AND HEALTH PROFESSIONALS IS NEEDED. SINCE CEREALS ARE USUALLY THE FIRST OPTION FOR COMPLEMENTARY FEEDING IN CHILDREN, THEY SHOULD BE CONSIDERED AS ONE OF THE MAIN OPTIONS FOR IRON FORTIFICATION. DUE TO ITS CHEMICAL STABILITY AND LOW COST, THE MAIN SOURCE USED IN FORTIFICATION IS ELECTROLYTIC IRON. HOWEVER, IT HAS SHOWN A LOW MINERAL AVAILABILITY, ESPECIALLY WHEN COMPARED WITH OTHER SOURCES SUCH AS FERROUS SULPHATE, CONSIDERED TO BE STANDARD ATTRIBUTING 100 % RELATIVE AVAILABILITY. OTHER ALTERNATIVES FOR FORTIFICATION THAT SHOULD BE CONSIDERED ARE FERROUS FUMARATE AND ENCAPSULATED MICRONISED FERRICO PYROPHOSPHATE. FOR FERROUS FUMARATE, AN EFFICIENT ABSORPTION IN ACID MEDIUM HAS BEEN DEMONSTRATED. IN THE CASE OF PYROPHOSPHATE, IT IS A NEW IRON SOURCE WITH A SMALL SIZE AND ANTI-AGGREGATE PROPERTIES. HOWEVER, IT IS NECESSARY TO HAVE SCIENTIFIC EVIDENCE TO ELUCIDATE ITS SUITABILITY FOR FORTIFICATION IN CHILDREN’S CEREALS. PARALLEL TO THE BIOAVAILABILITY OF THESE IRON SOURCES, THEIR EFFECT ON THE INTESTINAL MICROBIOTA SHOULD BE CONSIDERED. The MAINTENANCE OF A HEALTH MICROBIOTE OF THE FIRST ETAPAS OF LIFE CAN Help the PREVENTION OF CRONIC DISEASES IN ADULT LIFE, BUT TO PREVENTION INFECCIOUS DISEASES as diarrhoea CAUSED by pathogen enterobacteria, specifically in countries on development journeys._x000D_ in this project it is intended to select a BIODISPONIBILITY IRON IRON SOURCE, who can be used in INFANTILITY CEREALS. HIS ABSORPTION WILL BE STUDIED BOTH IN HUMAN CELL LINES AND IN WEANED PIGS. THE AIM IS TO DEEPEN THE MECHANISMS OF ABSORPTION OF THIS MINERAL BY STUDYING LEVELS OF GENIC EXPRESSION AND LOCALISATION OF TRANSPORTERS, ENZYMES AND PROTEINS INVOLVED IN THIS PROCESS. BUT THE MOST INNOVATIVE ASPECT OF THIS STUDY FOCUSES ON THE POSSIBLE EFFECT THAT THE DIFFERENT CHEMICAL FORMS OF IRON COULD HAVE ON THE INTESTINAL MICROBIOTA. FOR THIS WE WILL STUDY THE MODIFICATIONS OF THE DIFFERENT MICROBIAL GROUPS IN WEANED PIGS FED WITH THE DIFFERENT FORTIFIERS, AS WELL AS IN A CONTINUOUS MODEL OF GASTROINTESTINAL DIGESTION IN VITRO (SHIME), IN WHICH A FECAL INOCULUM OF INFANTS IS INCUBATED WITH THE DIGESTED FOOD, BEING ABLE TO MONITOR THE DYNAMIC CHANGES THAT OCCUR IN THE DIFFERENT INTESTINAL COMPARTMENTS.
