The Applicant, company Hopek S.C. Karol Hopek Maria Hopek Marcin Hopek has been manufacturing pastry and bakery products since 1997. The growing needs of the market and the growing awareness of customers require the inclusion of pro-health snack products in line with the latest nutritional trends. Taking into account the consumer preferences prevailing on the snack products market, the management board of the company decided that in the near future a new group of products in the form of non-fat, baked snack products of the type of high protein and health-promoting qualities will be introduced to the offer.The applicant therefore decided to commission research work aimed at developing technologies for the production of fat-free, baked snack products of the type of high protein and health-promoting chips. Lentils as a source of protein will be used for the production of the developed products. The protein contained should be characterised by a high bioavailability, as close as possible to the reference protein. The traditional frying in the case of chips will be replaced by the baking process. As a result, it will be possible to offer low-fat and gluten-free products. At present, the plant’s production capacity does not allow the production of a new assortment due to the lack of adequate technology adapted to the processing technology of the chips type snack products. The planned investment activities will significantly improve the efficiency of production and the quality of the offered assortment. The subject of the project will be the development of recipes and methods of production of innovative snack products of health value and implementation of the developed technology, which is related to the purchase of necessary equipment. It is planned to develop appropriate pat reservations. (English) | |||

Wnioskodawca, przedsiębiorstwo Firma Hopek S.C. Karol Hopek Maria Hopek Marcin Hopek zajmuje się produkcją wyrobów ciastkarskich i piekarskich od 1997 roku. Rosnące potrzeby rynku i coraz większa świadomość klientów wymagają włączenia do sprzedaży prozdrowotnych wyrobów przekąskowych, wpisujących się w najnowsze trendy żywieniowe. Mając na uwadze preferencje konsumentów panujące na rynku wyrobów przekąskowych, zarząd spółki zdecydował, iż w najbliższym czasie zostanie wprowadzona do oferty nowa grupa produktów w postaci beztłuszczowych, pieczonych wyrobów przekąskowych typu chipsy o wysokiej zawartości białka i walorach prozdrowotnych.W związku z powyższym Wnioskodawca zdecydował się na zlecenie prac badawczych, mających na celu opracowanie technologii produkcji beztłuszczowych, pieczonych wyrobów przekąskowych typu chipsy o wysokiej zawartości białka i walorach prozdrowotnych. Do produkcji opracowanych wyrobów zostanie wykorzystana soczewica stanowiąca źródło białka. Zawarte białko powinno charakteryzować się wysoką przyswajalnością, maksymalnie zbliżoną do białka wzorcowego. Tradycyjne w przypadku chipsów smażenie zostanie zastąpione procesem pieczenia. Dzięki temu możliwe będzie zaoferowanie wyrobów niskotłuszczowych i bezglutenowych.W celu wdrożenia nowych produktów do produkcji koniczne jest również odpowiednie doposażenie posiadanego parku technologicznego. W chwili obecnej moce produkcyjne zakładu nie pozwalają na produkcję nowego asortymentu ze względu na brak odpowiedniej technologii dostosowanej do technologii obróbki wyrobów przekąskowych typu chipsy. Dzięki zaplanowanym działaniom inwestycyjnym znacznie poprawiona zostanie efektywność produkcji i jakość oferowanego asortymentu. Przedmiotem projektu będzie opracowanie receptur i metod produkcji innowacyjnych wyrobów przekąskowych o walorach zdrowotnych oraz wdrożenie opracowanej technologii, z czym związany jest zakup niezbędnych urządzeń. Planuje się opracowanie stosownych zastrzeżeń patowych. (Polish)
