    El creciente consumo de los productos fritos en la dieta de las personas junto con la discusión, por parte de la sociedad civil, la comunidad científica y los organismos internacionales, sobre sus efectos perjudiciales en la salud, han sido factores que han impulsado una incremental tendencia legislativa sobre el uso de los aceites vegetales en la industria alimentaria. _x000D_ _x000D_ Esta tendencia plantea retos y consecuencias importantes para la industria y los servicios alimenticios españoles, que han de adaptarse al nuevo marco regulatorio europeo y a las nuevas preocupaciones y exigencias de la sociedad._x000D_ _x000D_ El proyecto HEALTHYOIL está enfocado en la fabricación de aceites vegetales más saludables para satisfacer la creciente demanda de los consumidores preocupados por la salud. Como resultado de este proyecto, se van a mejorar las propiedades de los aceites de fritura para conseguir aceites más beneficiosos y saludables para el cocinado doméstico o industrial de productos fritos. Estos aceites se probarán en los dos sectores más relevantes; el sector de industrias de alimentos fritos envasados y el sector Horeca. (Spanish)

    The growing consumption of fried products in people’s diet, together with the discussion by civil society, the scientific community and international organisations about their harmful effects on health, have been factors that have driven an increased legislative trend on the use of vegetable oils in the food industry. _x000D_ _x000D_ this trend poses important challenges and consequences for the Spanish food industry and services, which have to adapt to the new European regulatory framework and to the new concerns and demands of society._x000D_ _x000D_ The HEALTHYOIL project is focused on the production of healthier vegetable oils to meet the growing demand of consumers concerned about health. As a result of this project, the properties of frying oils will be improved to obtain more beneficial and healthy oils for the domestic or industrial cooking of fried products. These oils will be tested in the two most relevant sectors; the packaged fried food industry sector and the Horeca sector. (English)
