Currently all the cluster products on the market have either sweet or high fat ingredients, binders with high sugar content, as well as high density and texture. El objetivo del proyecto es el desarrollo de un nuevo snack tipo clúster de baja densidad basado en frutos secos y otros elementos de sabor salado, que presente propiedades nutricionales de alto valor añadido, textura diferencial y atractiva, así como bajo contenido tanto en grasas como en azúcares. Actualmente todos los productos tipo clúster del mercado presentan bien ingredientes dulces o con elevado contenido de grasas, ligantes con alto contenido en azúcar, así como alta densidad y textura apelmazada. Con este nuevo snack se pretende revolucionar el mercado de surtidos con una innovación disruptiva, consiguiendo un producto clean label que aúne las características de los mixes de frutos secos y otros snacks, con una textura y sabor atractivos para el consumidor, en un formato fácilmente consumible, con propiedades nutricionales de alto valor añadido y en consonancia con las necesidades de fomento de salud mediante la reducción de azúcares y grasas._x000D_ _x000D_ Este objetivo se va a intentar satisfacer tanto mediante el estudio y variación de los parámetros y tecnologías empleadas como parte del proceso actual de obtención de conglomerados dulces, como mediante el análisis y estudio de ingredientes base óptimos para incorporar en la matriz del producto y especialmente sustancias ligantes no dulces (que no contengan azúcar o edulcorantes).
