El envasado en atmósfera protectora (EAP) de la carne con niveles elevados de CO2 puede provocar un efecto negativo durante el periodo de conservación debido a que este gas es soluble en agua y grasa, provocando cambios en el pH que derivan en un incremento de la exudación, el colapso del envase y cambios en el sabor y en el aroma de la carne. Asimismo, el coste asociado al empleo de atmósferas ricas en CO2 se ha visto incrementado en los últimos tiempos debido a la escasez de este gas en Europa, suponiendo un incremento en el coste de producción de cada bandeja. Por otro lado, también se presenta la problemática de que los envases plásticos que conforman cada bandeja son desechados después de cumplir su función de contener o envolver, lo que genera impacto ambiental muy elevado, siendo necesario buscar otras alternativas que sean sostenibles con el medio ambiente._x000D_ INCARLOPSA necesita buscar soluciones y desarrollar estrategias que permitan aumentar la calidad de los productos EAP y disminuir los costes que presenta el empleo de CO2 como gas de envasado. El principal objetivo del proyecto es diseñar nuevas estrategias de envasado mediante el empleo de material plástico reciclable con el PET de atmósferas pobres en CO2 con el objeto de mejorar la calidad tecnológica, organoléptica y microbiológica de los productos._x000D_ Para alcanzar dicho objetivo, se ha diseñado un proyecto con 9 tareas experimentales divididas en 3 actividades según los objetivos tecnológicos intermedios: i) Evaluación del empleo de materiales de envasado que se emplean en el envasado de productos;ii) Diseño de atmósferas pobres en CO2 destinadas a mejorar la calidad de productos; iii) Interacción entre las atmósferas pobres en CO2 y material de envasado._x000D_ Para alcanzar estos objetivos se ha diseñado un proyecto con un plazo de ejecución de 28 meses y un presupuesto total de 629.436 €.
