Projekt zostanie zrealizowany przez Tymbark MWS sp. z o.o. sp.k.. Konieczność realizacji projektu związana jest z rozwojem przedsiębiorstwa, który poprzez działalność badawczo - rozwojową przyczynia się do rozwoju technologii w firmie w różnych zakresach. Zakres projektu obejmuje: I. przeprowadzenie prac przemysłowych II. przeprowadzenie prac rozwojowych III. zakup Infrastruktury B+R do prowadzenia badań Prace realizowane będą we współpracy z jednostką naukową, która odegra bardzo istotną rolę w procesie badawczym. W ramach projektu zostaną opracowane zarówno innowacje produktowe i procesowe: • opracowanie receptur na bazie jabłka czerwonomiąższowego Opracowanie technologii przetwarzania oraz dobór właściwych parametrów procesowych, umożliwiających zachowanie naturalnej intensywnie czerwonej barwy będzie przedmiotem badań w projekcie. Oprócz ustalenia optymalnych parametrów obróbki (takich jak m.in.: proces transportu, rozładunku, sortowania, mycia, wstępne przetwarzanie, temperatura, czas rozparzania, stopień przetarcia, ilość i jakość dozowanych środków pomocniczych/dodatków itp.) planuje się wprowadzenie innowacyjnego sposobu utrwalania – zastosowanie wysokich ciśnień (HPP – High Pressure Processing), jako alternatywę do klasycznej pasteryzacji. Innowacja procesowa: • wprowadzenie technologii utrwalania produktów metodą HPP Projekt wpisuje się w założenia określone w I osi priorytetowej Inteligentna Gospodarka Warmii i Mazur, jakim jest wzrost innowacyjności i konkurencyjności gospodarki regionu, a co za tym idzie poprawie warunków funkcjonowania firm regionu, ich przeżywalności, nowoczesności, podnoszenia i poszerzania oferty produktowej i usługowej. Projekt wpisuje się w cel poddziałania 1.2,2 oraz jest zgodny z celami określonymi w SZOOP. (Polish)

The project will be implemented by Tymbark MWS sp. z o.o. sp.k. The need to implement the project is related to the development of the company, which, through its research and development activities, contributes to the development of technology in the company in various areas. The scope of the project includes: I. conducting industrial works II. carrying out development works III. purchase of R & D infrastructure for conducting research The works will be carried out in cooperation with the scientific unit, which will play a very important role in the research process. The project will develop both product and process innovations: • development of recipes based on red apple The development of processing technologies and selection of appropriate process parameters, enabling the preservation of natural intense red color will be subject to research in the project. In addition to setting optimal machining parameters (such as: the process of transport, unloading, sorting, washing, pre-processing, temperature, burning time, degree of abrasion, quantity and quality of dosed auxiliaries/additions, etc.) is planned to introduce an innovative method of preservation – the use of high pressures (HPP) as an alternative to classical pasteurisation. Process innovation: • the introduction of the technology of product consolidation using the HPP method The project is in line with the assumptions set out in Priority Axis I of the Intelligent Economy of Warmia and Mazury, which is an increase in innovation and competitiveness of the region’s economy, thus improving the conditions of functioning of the companies in the region, their survival, modernity, increasing and expanding the product and service offer. The project is in line with the objective of sub-measure 1.2,2 and is in line with the objectives set out in the SZOOP. (English)
