The objective of this project is to provide Andalusian agri-food companies with differentiated nutrition information that helps them to promote the consumption of a range of foods of great implantation in Andalusia as well as new productions of high commercial value or elaborations derived from them (orange, cheese, wine, chickpeas, pistachio, garlic, carrots and subtropicals). Additionally, the study of the incidence of processing in the appearance of unwanted compounds will be addressed._x000D_ This main objective is intended to be achieved through nutritional characterisation, with special attention to health-related compounds, and the evaluation of their potential health effects through the study of their bioavailability and biological action on certain risk factors (blood pressure, cholesterol, blood glucose levels, among others), using both issues as a competitive claim. In addition, a nutritional and biofunctional understanding of the foods studied, as well as the influence of the production processes on the loss or appearance of bioactive compounds, will have a direct relevance in the development of any food product derived from them._x000D_ The transfer and dissemination of the results of the project will be guaranteed as national associations such as ASOZUMOS (Spanish Association of Juice Manufacturers) and the National Tropical Association (association that brings together tropical fruit producers, mainly from Andalusia) and other companies interested in the results are part of the project.     El objetivo de este proyecto es dotar a las empresas agroalimentarias andaluzas de información nutricional diferenciada que les ayude a promover el consumo de una gama de alimentos de gran implantación en Andalucía así como nuevas producciones de alto valor comercial o elaboraciones derivadas de los mismos (naranja, queso, vino, garbanzo, pistacho, ajo, zanahoria y subtropicales). Adicionalmente se abordará el estudio de la incidencia del procesado en la aparición de compuestos no deseados._x000D_ Este objetivo principal se pretende lograr mediante la caracterización nutricional, con especial atención en los compuestos relacionados con la salud, y la evaluación de sus potenciales efectos en salud a través del estudio de su biodisponibilidad y acción biológica sobre determinados factores de riesgo (presión arterial, colesterol, niveles de glucosa en sangre, entre otros), utilizando ambas cuestiones como reclamo competitivo. Además, una comprensión nutricional y biofuncional de los alimentos estudiados, así como sobre la influencia de los procesos de elaboración en la pérdida y/o aparición de compuestos bioactivos, tendrá una relevancia directa en el desarrollo de cualquier producto alimentario derivado de los mismos._x000D_ La transferencia y la difusión de los resultados del proyecto estará garantizada ya que forman parte del proyecto asociaciones nacionales como ASOZUMOS (asociación Española de fabricantes de zumos) y la Asociación Nacional de Tropicales (asociación que agrupa a productores de frutas tropicales, principalmente de Andalucía) así como otras empresas interesadas en los resultados.
