THE DETECTION AND RAPID IDENTIFICATION METHODS CURRENTLY IMPLEMENTED PRESENTLY HAVE THE DISADVANTAGE OF BEING LIMITED TO A FEW SPECIES (REAL-TIME PCR), NEEDING LONG PROCESSING (SEQUENCE, DO), NOT BE QUANTITATIVE (SEQUENCING, MALDI-TOF), DO NOT ALLOW DETECTION IN COMPLEX MIXTURES SUCH AS FOOD (SEQUENCING, MALDI-TOF), AND PRACTICALLY ALL OF THEM NEED PREVIOUSLY PLATE SOWING. THAT IS WHY IT IS NECESSARY TO IMPLEMENT METHODS THAT ALLOW THE RAPID AND ACCURATE DETECTION OF CONTAMINATING SPECIES IN THE FOOD AS WELL AS THE QUANTIFICATION DIRECTLY IN A FOOD SAMPLE. THIS IS THE CASE WITH THE METHODOLOGY PROPOSED IN THIS PROJECT: THE DEFINITION OF BIOMARKING PEPTIDES OF PATHOGENOUS AND BIOGENOUS AMINE-PRODUCING SPECIES IN FOOD AND THE SUBSEQUENT IMPLEMENTATION OF THE APPLICATION OF THESE PEPTIDES FOR DETECTION IN FOOD SAMPLES. The LIQUID CROMATOGRAPHY ACOPLATE TO SPECTROMETRIA OF MASAS IN TANDEM IN an electrospray-TRAMPA IONICA EQUIPMENT (LC-ESI-IT-MS/MS) and POSTERIOR ANALISIS MEDIENT DIFFERENT SOFTWARE AND COMPARATION WITH AMINOACIDIC SECUTIONS deposited in DATA BASES._x000D_ in order to lead to the deposition of bio-marker PEPTIDs, it is necessary to provide for a full range of BACTERIAAN CEPAS to take over the Analyses. THE BACTERIAL SPECIES INCLUDED IN THE STUDY WILL INCLUDE THOSE THAT ARE MOST FREQUENTLY ISOLATED IN FOOD PRODUCTS, AS DESCRIBED IN THE LITERATURE, AND INCLUDE THE FAMILY ENTEROBACTERIACEAE, SALMONELLA, SHIGELLA, PROTEUS, COAGULASE-POSITIVE STAPHYLOCOCCI; CLOSTRIDIUM PERFRINGENS, L. MONOCYTOGENES, BACILLUS CEREUS, AND C. BOTULINUM TYPES E AND B, BACILLUS CEREUS, B. SUBTILIS AND B. LICHENIFORMIS, VIBRIO PARAHAEMOLYTICUS, CAMPYLOBACTER SPP., CAMPYLOBACTER JEJUNI, LISTERIA MONOCYTOGENES AND YERSINIA ENTEROCOLITICA, STAPHYLOCOCCUS AUREUS, BACILLUS SPP AND PAENIBACILLUS SPP. OUR LABORATORY HAS A WIDE COLLECTION OF BACTERIAL STRAINS ISOLATED FROM VARIOUS FOODS (MEAT, FISH, MINIMALLY PROCESSED AND READY FOR CONSUMPTION, MILK, ETC.). ALL OF THEM HAVE BEEN CHARACTERISED BY DIFFERENT METHODS, BOTH CLASSICAL AND GENOMIC AND PROTEOMIC (MALDI-TOF).
