The development of new technologies, the acquisition of knowledge or the discovery of solutions during research projects does not go beyond the research phase and barely reaches the target group, namely the companies. The gap between the research phase and the implementation of technological innovations is sometimes too wide because certain socio-economic factors are not taken into account or are not known. As a result, companies continue to use existing knowledge (sometimes outdated or incomplete) and the transition from traditional technologies to innovative technologies remains a complicated process. During the VEG-i-TEC project, modular processing lines will be built that are representative of the vegetable and potato processing industry. This will make it possible to evaluate the impact of different unitary processing steps, including these innovative technologies, from the perspective of the quality of the finished product, the hygienic design and the consumption of water and energy. In addition, the economic, ecological and social impact of these technologies will be studied. This multi-disciplinary approach offers a complete answer to companies regarding the choice of a given technology and how to implement it in the company. (English)
