In particular, given that FOVEX, SAT dominates the entire value chain, with this project aims to optimise the feeding of ewes for the production of quality milk with cheese-fitting, involving itself in the process of processing to obtain artisanal products and possibly subject to different figures or standards of protection that give them greater added value, such as obtaining large creamy La Serena Tortas, these do not currently exist, to present only their cream in new packaging formats._x000D_ To achieve this objective, it is proposed to control the feeding of sheep with the aim of obtaining homogeneous quality milk with good cheeses, through the control of sheep grazing and monitoring of crops using georeference technology, in addition to designing a new process for obtaining new creamy, large-sized Torta cheeses that allow the profitable extraction of its cream to generate other products packaged in new formats.     El objetivo general del proyecto es la mejora de la alimentación de ovejas para la obtención de leches orientadas al desarrollo de nuevas Tortas de La Serena de gran tamaño rentables para generar productos envasados en nuevos formatos._x000D_ El proyecto nace de la necesidad de abordar los problemas que el sector ovino de leche está sufriendo los últimos años en relación a la disminución de la rentabilidad de las explotaciones como consecuencia de los incrementos en los costes de alimentación de las ovejas. De forma particular y dado que la empresa FOVEX, SAT domina toda la cadena de valor, pretende con el presente proyecto optimizar la alimentación de las ovejas para la obtención de leches de calidad con aptitud quesera, implicándose en el proceso de transformación para la obtención de productos de elaboración artesanal y eventualmente sujetos a distintas figuras o normas de protección que les confieran un mayor valor añadido, como la obtención de Tortas de La Serena cremosas de gran tamaño, las cuales no existen actualmente, para presentar únicamente su crema en nuevos formatos de envasado._x000D_ Para conseguir este objetivo, se plantea controlar la alimentación de ovejas con el objetivo de obtener leches homogéneas de calidad con buena aptitud quesera, a través del control del pastoreo de ovejas y seguimiento de cultivos utilizando tecnología de georreferenciación, además de diseñar un nuevo proceso para la obtención de nuevos quesos tipo Torta cremosos, de gran tamaño, que permitan la extracción rentable de su crema para generar otros productos envasados en nuevos formatos.
