El presente proyecto tiene por objeto el desarrollo de una nueva línea de productos elaborados y precocinados en el nuevo obrador de AVIGASA S.L. Los productos englobados en este proyecto serán callos, croquetas y cachopos. Se estudiará la formulación del producto, el proceso de elaboración y envasado, junto con la estrategia de conservación más adecuada en cada caso. Para ello se realizarán y validarán las pruebas piloto necesarias. (Spanish)

This project aims to develop a new line of prepared and pre-cooked products in the new kitchens at AVIGASA S.L. The products included in the project are tripe, croquettes and "cachopos" (Asturian cordon bleu). The product will be studied for content, preparation and packaging, together with the best conservation strategy in each case. Pilot tests will be carried out and validated as necessary. (English)
