Realización de ensayos de laboratorio que reproduzcan condiciones de procesado industriales para evaluar y comparar el comportamiento y efecto de diferentes ingredientes texturizantes de origen vegetal y de algas en bebidas lácteas y vegetales y posterior seguimiento reológico de las muestras elaboradas. A partir de la información obtenida de los ensayos se podrá diseñar una nueva linea de productos estabilizantes y texturizantes para elaboración de bebidas lácteas y vegetales. (Spanish)
