NO OBSTANTE, LAS MATERIAS PRIMAS DE ORIGEN VEGETAL EMPLEADAS EN SU ELABORACION SON SUSCEPTIBLES DE TRANSMITIR MICROORGANISMOS (PATOGENOS O NO) PORTADORES DE RESISTENCIAS A AGENTES ANTIMICROBIANOS. COMO OBJETIVO GENERAL SE PLANTEA CONOCER LA BIODIVERSIDAD BACTERIANA Y EL RESISTOMA EN MATERIAS PRIMAS DE ORIGEN VEGETAL DESTINADAS A LA ELABORACION DE ALIMENTOS MINIMAMENTE PROCESADOS LISTOS PARA CONSUMO Y MEJORAR SU SEGURIDAD DISMINUYENDO LA CARGA DE MICROORGANISMOS PORTADORES DE GENES DE RESISTENCIA, MEDIANTE TRATAMIENTOS POR ALTA PRESION HIDROSTATICA (APH). MEDIANTE TECNOLOGIAS DE SECUENCIACION MASIVA, SE ESTUDIARA LA BIODIVERSIDAD BACTERIANA Y EL RESISTOMA (CONJUNTO DE GENES DE RESISTENCIA A ANTIMICROBIANOS) PRESENTES EN MATERIAS PRIMAS DE ORIGEN VEGETAL SUSCEPTIBLES DE SER TRANSFORMADAS EN ALIMENTOS ESTABILIZADOS MEDIANTE TRATAMIENTOS POR APH. TAMBIEN SE DETERMINARA EL IMPACTO DE LOS TRATAMIENTOS POR APH EN LA BIODIVERSIDAD BACTERIANA Y EL RESISTOMA DEN LOS ALIMENTOS RESULTANTES (JUGOS DE VERDURAS Y HORTALIZAS, SALSAS Y ALIÑOS). SE ESTUDIARA LA RECUPERACION DE LA FRACCION BACTERIANA SUPERVIVIENTE A LOS TRATAMIENTOS POR ALTA PRESION Y SU BIODIVERSIDAD A LO LARGO DEL ALMACENAMIENTO DE LOS ALIMENTOS EN REFRIGERACION, ASI COMO EL RESISTOMA AL FINAL DEL PERIODO DE VIDA UTIL DEL ALIMENTO. EN LOS ALIMENTOS TRATADOS, SE DETERMINARA TAMBIEN LA PRESENCIA DE CEPAS CON FENOTIPOS MULTIRRESISTENTES (INCLUYENDO ANTIBIOTICOS Y BIOCIDAS) Y SE ABORDARA SU IDENTIFICACION Y EL ESTUDIO DE LA PRESENCIA DE GENES DE RESISTENCIA. EN EXPERIMENTOS SEPARADOS, LOS ALIMENTOS SERAN INOCULADOS CON CEPAS BACTERIANAS (AISLADAS DE ALIMENTOS VEGETALES) MULTIRRESISTENTES A ANTIBIOTICOS Y BIOCIDAS ASI COMO CEPAS ADAPTADAS A BIOCIDAS MEDIANTE SUBCULTIVO EN LABORATORIO, A FIN DE DETERMINAR LOS EFECTOS DE LOS TRATAMIENTOS POR APH EN SU INACTIVACION Y LA POSTERIOR PROLIFERACION DE LOS SUPERVIVIENTES DURANTE EL ALMACENAMIENTO DEL ALIMENTO. CABE ESPERAR QUE LOS RESULTADOS DEL PROYECTO CONTRIBUYAN A UN MEJOR CONOCIMIENTO DE LA BIODIVERSIDAD BACTERIANA Y EL RESISTOMA EN ALIMENTOS VEGETALES Y LA UTILIDAD DE LOS TRATAMIENTOS POR APH PARA DISMINUIR EL FONDO DE RESISTENCIAS A ANTIMICROBIANOS EN DICHOS ALIMENTOS (Spanish)

PLANT FOODS ARE CONSIDERED AN ESSENTIAL COMPONENT OF HUMAN FOOD. RECENTLY, INTEREST IN READY-TO-EAT AND MINIMALLY PROCESSED VEGETABLE FOODS HAS INCREASED DUE TO THEIR HIGH PHYTONUTRIENT CONTENT. HOWEVER, THE RAW MATERIALS OF PLANT ORIGIN USED IN THEIR MANUFACTURE ARE LIABLE TO TRANSMIT MICROORGANISMS (PATHOGENS OR NOT) CARRIERS OF RESISTANCE TO ANTIMICROBIAL AGENTS. AS A GENERAL OBJECTIVE, IT IS PROPOSED TO KNOW THE BACTERIAL BIODIVERSITY AND RESISTOMA IN RAW MATERIALS OF PLANT ORIGIN INTENDED FOR THE PREPARATION OF MINIMALLY PROCESSED READY-TO-EAT FOOD AND IMPROVE ITS SAFETY BY REDUCING THE LOAD OF MICROORGANISMS CARRYING RESISTANCE GENES, THROUGH HIGH HYDROSTATIC PRESSURE (HAP) TREATMENTS. USING MASS SEQUENCING TECHNOLOGIES, BACTERIAL BIODIVERSITY AND RESISTOMA (SET OF ANTIMICROBIAL RESISTANCE GENES) PRESENT IN RAW MATERIALS OF PLANT ORIGIN THAT CAN BE TRANSFORMED INTO FOOD STABILISED BY APH TREATMENTS WILL BE STUDIED. IT WILL ALSO DETERMINE THE IMPACT OF APH TREATMENTS ON BACTERIAL BIODIVERSITY AND THE RESISTOMA GIVE THE RESULTING FOODS (VEGETABLE JUICES, SAUCES AND DRESSINGS). THE RECOVERY OF THE SURVIVING BACTERIAL FRACTION TO HIGH PRESSURE TREATMENTS AND ITS BIODIVERSITY WILL BE STUDIED THROUGHOUT THE STORAGE OF FOOD IN REFRIGERATION, AS WELL AS THE RESISTANCE AT THE END OF THE USEFUL LIFE PERIOD OF THE FOOD. IN TREATED FOODS, THE PRESENCE OF STRAINS WITH MULTIDRUG RESISTANT PHENOTYPES (INCLUDING ANTIBIOTICS AND BIOCIDES) WILL ALSO BE DETERMINED AND THEIR IDENTIFICATION AND STUDY OF THE PRESENCE OF RESISTANCE GENES WILL BE ADDRESSED. IN SEPARATE EXPERIMENTS, FOOD WILL BE INOCULATED WITH BACTERIAL STRAINS (PLANT FOOD ISOLATES) MULTI-RESISTANT TO ANTIBIOTICS AND BIOCIDES AS WELL AS STRAINS ADAPTED TO BIOCIDAL PRODUCTS BY SUBCULTURE IN THE LABORATORY, TO DETERMINE THE EFFECTS OF APH TREATMENTS ON THEIR INACTIVATION AND SUBSEQUENT PROLIFERATION OF SURVIVORS DURING FOOD STORAGE. IT IS HOPED THAT THE RESULTS OF THE PROJECT WILL CONTRIBUTE TO A BETTER UNDERSTANDING OF BACTERIAL BIODIVERSITY AND RESISTOMA IN PLANT FOODS AND THE USEFULNESS OF APH TREATMENTS TO DECREASE THE ANTIMICROBIAL RESISTANCE FUND IN PLANT FOODS (English)
