    El presente proyecto tiene como objetivo principal la obtención de panes -elaborados a partir de diferentes MMC y de harinas provenientes de cereales ancestrales, cereales con un menor contenido en gluten, cereales sin gluten y pseudocereales- que presenten un menor contenido en gluten, gliadinas tóxicas y fitatos que los PSMMC y que ejerzan efectos saludables, en relación a la biodisponibilidad de minerales, la respuesta glucémica, la saciedad y la inflamación.
