    El objetivo principal del presente proyecto es el diseño y desarrollo de nuevas estrategias para la minimización de contaminantes en aceites y grasas vegetales. Concretamente, se persigue la reducción de la presencia del 3-monocloropropano-1,2-diol (3-MCPD) y de ésteres glicidílicos de ácidos grasos._x000D_ Para ello, LIPSA va a investigar el uso de nuevas metodologías de procesado, así como la prospección y definición de las características de las materias primas necesarias, de modo que sea viable tecnológicamente la reducción del contenido final en el producto de estas sustancias críticas.
