Cílem projektu je vyvinout biotechnologické preparáty postavené na principu funkčních mikrobiálních konsorcií za účelem technologicky využít pozitivních vlastností, jimiž disponují z hlediska snazší adaptace, ochrany před letálními faktory, rychlejšího využití substrátu, případně schopnostem propůjčit některým potravinářským produktům zcela jiné a unikátní organoleptické vlastnosti.
