El objetivo general del proyecto es el desarrollo de envases plásticos comerciales que incorporarán compuestos naturales activos frente a procesos de degradación química, presentes en extractos obtenidos de subproductos del sector del vino generados en bodega durante su proceso de elaboración. De forma paralela y posibilitada por los envases innovadores, se desarrollarán productos alimentarios tomando como base el vino, de calidad tecnológica y comercial innovadora._x000D_ Para ello se ejecutarán una seria de acciones necesarias tales como:_x000D_ • Obtener extractos naturales activos procedentes de orujos del vino, estables y acondicionados a formas químico-físicas preferidas, evaluando su capacidad antioxidante mediante ensayos in-vitro._x000D_ • Desarrollar envases plásticos innovadores de PET, que incorporarán extractos naturales químicamente activos que mejoren la capacidad de conservación de los productos de las bodegas y los nuevos a desarrollar. _x000D_ • Desarrollar nuevas bebidas con gas de calidad diferenciada a partir de vinos blancos de segunda que lleven incorporados zumos de fruta, en envases activos de PET y con diseños innovadores. _x000D_ • Adaptación de los nuevos envases activos desarrollados a las líneas de proceso de las bodegas, así como investigación de la interacción envase-producto a lo largo tiempo con el fin último de conservar adecuadamente todos los productos en estudio. The general objective of the project is the development of commercial plastic packaging that will incorporate natural compounds active against chemical degradation processes, present in extracts obtained from by-products of the wine sector generated in the winery during their production process. In parallel and made possible by innovative packaging, food products will be developed on the basis of wine, of innovative technological and commercial quality._x000D_ To this end, a serious number of necessary actions will be carried out, such as:_x000D_ • Obtain active natural extracts from wine marc, stable and conditioned to preferred chemical-physical forms, evaluating their antioxidant capacity through in-vitro testing._x000D_ • Develop innovative PET plastic packaging, which will incorporate chemically active natural extracts that improve the conservation capacity of the products of the wineries and the development of new products. _x000D_ • develop new gas drinks of differentiated quality from second-class white wines incorporating fruit juices, in active PET packaging and with innovative designs. _x000D_ • Adaptation of the new active packaging developed to the process lines of the wineries, as well as research into the container-product interaction over time with the ultimate aim of properly retaining all the products under study.
