Le projet CDEA est un projet collaboratif qui fait intervenir une cinquantaine de chercheurs de 4 instituts différents situés sur le Grand campus Dijonnais: l'Institut de Chimie Moléculaire de l'Université de Bourgogne, de l'UMR Procédés Alimentaires et Microbiologiques (PAM), du Laboratoire de Toxicologie alimentaire DERTTECH "PACKTOX" et de l'équipe Nanoform du Laboratoire Interdisciplinaire Carnot de Bourgogne. Dans l’optique d'apporter des réponses pragmatiques aux grands défis sociétaux (préservation de l'environnement, transition écologique, raréfaction des ressources alimentaires, …), le projet CDEA vise à économiser les ressources naturelles, en valoriser d'autres encore inexploitées, améliorer les procédés de fabrication et contrôler la qualité des produits.
