Vinn’old est un projet visant à améliorer les choix et itinéraires techniques, tant au vignoble qu’au chai, en s’appuyant sur le patrimoine végétal autochtone et le savoir-faire des vignerons de Plaimont. L’étude du matériel végétal viticole oublié doit permettre d’adapter l’encépagement à son environnement tout en poursuivant l’amélioration du vignoble en place et des pratiques œnologiques pour différencier les vins sur le marché mondial et poursuivre le développement économique de Plaimont et de son territoire.
