Following an ongoing study to determine precisely the quantity and volume markets of ESS catering companies, it is necessary to guarantee the quality and origin of supplies in connection with local producers, by defining specifications and accompanying producers, in parallel with the development of agreements with catering partners ensuring consumer guarantees and thus avoiding surplus and waste. A second strand of actions aims to support those with specific needs affected by the employment induced by the use of non-industrial regional products requiring preliminary preparation, as part of the development of skills in the workshops to prepare existing and new activities.? The implementation of these actions is part of the creation of a platform dedicated to the outcome of the operation, which consists of modelling the means for supporting jobs and experimenting within the extension of a preparatory workshop (AVS relays). An area of work is also based on the emergence of incubators of agricultural enterprises, which will enable the volumes useful for this expected change of scale to be obtained, integrating the support of new farmers. Suite à une étude en cours devant permettre de déterminer précisément les marchés en quantité et volume auprès des entreprises de l'ESS en restauration, il convient de garantir la qualité et l'origine des approvisionnements en lien avec les producteurs locaux, par la définition de cahiers des charges et l'accompagnement des producteurs, en parallèle au développement de conventions avec les partenaires de la restauration assurant des garanties de consommation et évitant ainsi le surplus et le gaspillage. Un second volet d'actions vise à accompagner les publics à besoins spécifiques concernés par les emplois induits par l'utilisation de produits régionaux non industrialisés nécessitant une préparation préliminaire, dans le cadre du développement des compétences dans les ateliers de préparation des activités existantes et en création.? La mise en œuvre de ces actions s'inscrit dans le cadre de la création d'une plateforme dédiée à l'issue de l'opération, qui consiste à la modélisation des moyens pour l'accompagnement des emplois et à l'expérimentation au sein de l'extension d'un atelier de préparation (Relais AVS). Un axe de travail repose également sur l'émergence de pépinières d'entreprises agricoles qui permettront d'obtenir les volumes utiles à ce changement d'échelle escompté, intégrant l'accompagnement de nouveaux exploitants.
