The project is a prototype of a complex technology line for the production of vegetable germ with an increased quality adapted to the expectations of industrial users.The aim of the project is to eliminate or significantly reduce the phenomena of standard production technologies that prevent full satisfaction of customers’ demands.The main task will be to carry out the planned research and development (R & D), which will focus on deepening the specific knowledge and developing the possibilities for practical changes in areas that have a significant impact on the identified production cycle factors:variability in the process of growing sprouts under mass production conditions, microbiological risks and instantaneous, difficult to predict and control peaks in energy demand.The research will also cover the phenomenon of heat generation in the biological germination process of seeds and the possibility to use the heat in successive cycles of the production process of the growing of sprouts and to take into account the energy demand in the global balance sheet.The objective of the project will be achieved when the R & D results have been implemented and will result in the creation of a prototype of a comprehensive technology line that will continuously be seamless to produce vegetable germ with repeated quality, improved microbiological quality based on recovered process heat.As a result of the innovative technology, the applicant wishes to achieve a significant improvement in the quality of the product by harmonising the parameters of vegetable germ, improving the microbiological quality after transport to the customer and improving the functionality of the technological line in order to preserve the continuity of the production process, from (English) | |||

Przedmiotem projektu jest prototyp kompleksowej linii technologicznej do produkcji kiełków warzywnych o podwyższonej jakości dostosowanej do oczekiwań odbiorców przemysłowych. Celem projektu jest eliminacja lub istotne ograniczenie zjawisk występujących w standardowej technologii produkcji, które uniemożliwiają pełne zaspokojenie wymagań klientów. Głównym zadaniem będzie przeprowadzenie zaplanowanych prac badawczo-rozwojowych, które koncentrować się będą na pogłębianiu specyficznej wiedzy oraz wypracowaniu możliwości praktycznego wprowadzenia zmian w obszarach mających istotny wpływ na zidentyfikowane czynniki zaburzające cykl produkcyjny: zmienność w procesie wzrostu kiełków w warunkach produkcji masowej, ryzyko mikrobiologiczne oraz chwilowe, trudne do przewidzenia i kontroli skoki zapotrzebowania na energię. Badaniami objęte będzie również zjawisko wytwarzania ciepła w czasie biologicznego procesu kiełkowania nasion i możliwość jego wykorzystania w kolejnych cyklach uruchamianego procesu produkcyjnego wzrostu kiełków oraz uwzględnienie w ogólnym bilansie zapotrzebowania na energię. Cel projektu zostanie osiągnięty w momencie wdrożenia wyników prac badawczo-rozwojowych, efektem których będzie zbudowanie prototypu kompleksowej linii technologicznej, która w sposób ciągły bez zakłóceń pozwoli na produkcję kiełków warzywnych o powtarzalnej jakości, polepszonej jakości mikrobiologicznej wykorzystującej odzyskane ciepło technologiczne. W rezultacie zastosowania innowacyjnej technologii wnioskodawca chce osiągnąć istotną poprawę jakości produktu w postaci ujednolicenia parametrów kiełków warzywnych, poprawy jakości mikrobiologicznej po czasie transportu do klienta oraz poprawę funkcjonalności linii technologicznej, która pozwoli na zachowanie ciągłości procesu produkcyjnego, od (Polish)
