ENTRE OTRAS CAUSAS, ESTA BAJA TRANSFERENCIA ES DEBIDA A QUE PARTE DE ESOS COMPUESTOS FENOLICOS SON ADSORBIDOS POR LAS PAREDES CELULARES DE LA PULPA Y EL HOLLEJO, QUE AL PRINCIPIO DE LA ELABORACION ESTAN EN GRANDES CANTIDADES EN SUSPENSION EN EL MOSTO.
