Within the framework of the proposal, a comprehensive plan for isolation and study of the chemical composition of the two aforementioned fractions from the vinification residues derived from both indigenous varieties of the Ionian and mixtures thereof between them and other varieties is proposed. Both of these fractions are used as food additives, food supplements in cosmetology etc., and are almost exclusively imported as there are no units of marc treatment not only in the Ionian Islands but also throughout Greece. Το παρόν έργο αφορά την αξιοποίηση παραπροϊόντων οινοποίησης για την παραγωγή προϊόντων υψηλής προστιθέμενης αξίας (πολυφαινόλες, γιγαρτέλαιο) που χρησιμοποιούνται στη βιομηχανία τροφίμων, καλλυντικών, παραφαρμακευτικών καθώς και φαρμακευτικών σκευασμάτων. Στο πλαίσιο της πρότασης προτείνεται ένα ολοκληρωμένο σχέδιο απομόνωσης και μελέτης της χημικής σύστασης των δυο προαναφερόμενων κλασμάτων από τα υπολείμματα οινοποίησης που προέρχονται τόσο από γηγενείς ποικιλίες του Ιονίου καθώς και μίγματα αυτών μεταξύ τους ή και με άλλες ποικιλίες. Και τα δυο αυτά κλάσματα χρησιμοποιούνται ως πρόσθετα τροφίμων, συμπληρώματα διατροφής στην κοσμετολογία κλπ., και είναι σχεδόν αποκλειστικά εισαγόμενα καθώς δεν υπάρχουν μονάδες επεξεργασίες στεμφύλων όχι μόνο στην Περιφέρεια Ιονίων Νήσων αλλά και σε όλη την Ελλάδα.
