Vinn’old est un projet visant à améliorer les choix et itinéraires techniques, tant au vignoble qu’au chai, en s’appuyant sur le patrimoine végétal autochtone et le savoir-faire des vignerons de Plaimont. L’étude du matériel végétal viticole oublié doit permettre d’adapter l’encépagement à son environnement tout en poursuivant l’amélioration du vignoble en place et des pratiques œnologiques pour différencier les vins sur le marché mondial et poursuivre le développement économique de Plaimont et de son territoire. Vinn’old is a project aimed at improving the choices and technical itineraries, both at the vineyards and the chai, building on the indigenous plant heritage and the know-how of the winegrowers of Plaimont. The study of the forgotten plant material should make it possible to adapt the encepagement to its environment while continuing to improve the existing vineyards and oenological practices to differentiate wines on the world market and pursue the economic development of Plaimont and its territory.
