Witnica S.A. brewery in response to the needs of consumers and the development of the regional product market will introduce 3 new products, i.e. upper fermentation beer Black IPA type, gluten-free beer, non-pasteurised beer, non-alcoholic beer. The technological process of beer production and products are the result of research carried out in its own R & D cell and in cooperation with the Lubuskie Centre for Agricultural Implementation in Kalsk. The developed method of brewing allowed separation of the processes of production of beer and upper fermentation, as well as by the use of proteolytic enzymes and blurring methods of obtaining gluten-free beer. The innovative technology allows fermentation in open vats with the ability to control temperature and freeze beer before spilling, which in turn slows down chemical reactions and life processes of microorganisms, increases the rate of floculation and sedimentation of particulates, which in turn allows for natural clarification without the use of chemical agents. In this technological process we will obtain beer with a lower content of chemical compounds and a higher content of minerals and vitamins. The proposed solution combines the traditional approach to brewing (maintaining the appropriate length of technological processes) with modernity and progress, which allows for an ever better utilisation of the production potential. The aim of the investment is to increase the company’s competitiveness, broaden the product offer and thus increase the production capacity of the existing plant. The production technology used meets the sustainability policy requirements by optimising solutions that have a positive impact on environmental protection. These energy savings, raw materials and reduced emissions have a positive impact on the implementation of horizontal policies.[...] (English)

    Browar Witnica S.A. w odpowiedzi na potrzeby konsumentów i rozwoju rynku produktów regionalnych wprowadzi do oferty sprzedażowej 3 nowe produkty tj. piwo górnej fermentacji typu Black IPA, piwo bezglutenowe niepasteryzowane, piwo bezalkoholowe smakowe. Proces technologiczny produkcji piw jak i produkty są wynikiem przeprowadzonych badań we własnej komórce B+R oraz we współpracy z Lubuskim Ośrodkiem Wdrożeń Agrotechnicznych w Kalsku. Opracowana metodyka warzenia pozwoliła na oddzielenie procesów wytwarzania piw dolnej i górnej fermentacji oraz dzięki wykorzystaniu enzymów proteolitycznych i metod zacierania uzyskania piwa bezglutenowego. Innowacyjna technologia umożliwia prowadzenie fermentacji w otwartych kadziach z możliwością sterowania temperaturą oraz wymrażania piwa przed rozlewem co ma wpływ na spowolnienie reakcji chemicznych oraz procesów życiowych mikroorganizmów, zwiększenie szybkości flokulacji oraz sedymentacji cząstek stałych co z kolei pozwala na naturalne klarowanie bez zastosowania środków chemicznych. W tak opracowanym procesie technologicznym uzyskamy piwa o mniejszej zawartości związków chemicznych i większej zawartości minerałów i witamin. Proponowane rozwiązanie łączy w sobie tradycyjne podejście do browarnictwa ( zachowanie odpowiedniej długości trwania procesów technologicznych) z nowoczesnością i postępem, który pozwala na coraz lepsze wykorzystanie potencjału produkcyjnego. Celem realizacji inwestycji jest wzrost konkurencyjności Firmy, poszerzenie oferty produktowej i tym samym zwiększenie możliwości produkcyjnych istniejącego zakładu. Zastosowana technologia produkcji spełnia wymagania w zakresie polityki zrównoważonego rozwoju, poprzez optymalizacje rozwiązań mających pozytywnych wpływ na ochronę środowiska.
