The aim of the project is to manufacture and test an innovative industrial device for food preservation and processing using high hydrostatic pressure up to 600 MPa (HPP). As part of the project, a prototype high pressure chamber, a chamber sealing system and a system for producing and increasing pressure in the chamber will be designed and constructed. The pressure tests carried out on the chamber and the results of the strength tests carried out under the target operating conditions will determine the choice of the final design of the chamber and its components. The test chamber will correspond to the size of the chamber in the target device. The chosen solution will be used for the construction of a complete industrial device operating in the continuous operation system. In the second phase of the project, the industrial prototype of the machine will be produced and technological tests will be carried out on selected food products. The aim of these studies will be the final validation of the process as well as the complete solution for high-pressure food processing.     Celem projektu jest wytworzenie i przetestowanie innowacyjnego urządzenia przemysłowego do utrwalania i przetwarzania żywności za pomocą wysokiego ciśnienia hydrostatycznego do 600 MPa (HPP - high pressure processing). W ramach projektu zostanie zaprojektowana i wykonana prototypowa komora wysokiego ciśnienia, system uszczelnienia komory oraz system do wytwarzania i podwyższania (wzmacniania) ciśnienia w komorze. Testy ciśnieniowe wykonane na komorze i wyniki badań wytrzymałościowych, przeprowadzone w docelowych warunkach pracy, zdeterminują wybór finalnej konstrukcji komory i jej komponentów. Komora testowa będzie odpowiadała rozmiarom komory w urządzeniu docelowym. Wybrane rozwiązanie zostanie zastosowane przy budowie kompletnego urządzenia przemysłowego działającego w systemie pracy ciągłej. W drugiej fazie projektu wyprodukowany zostanie prototyp przemysłowy maszyny oraz przeprowadzone zostaną testy technologiczne na wybranych produktach spożywczych. Celem tych badań będzie finalna walidacja procesu, jak i kompletnego rozwiązania do wysokociśnieniowego przetwarzania żywności.
