L’UMR UMET et la société Ingredia ont créé le laboratoire commun Proteinolab (AAP ANR LabCom 2017 qui vise au développement d’isolats protéiques laitiers innovants utilisés comme ingrédients fonctionnels (commercialisés sous forme de poudres) dans des applications hyperprotéinées (HP) du domaine de l’alimentaire et de la nutrition. (développement de la masse musculaire, effet satiétogène, sarcopénie, fonte musculaire,nutrition clinique).Les travaux du LabCom ont montré que les modifications induites sur des isolats protéiques peuvent conduire à une distribution et des propriétés d’agrégats différents et parfois à une diminution de la viscosité, facilitant l’ingestion de ces boissons par les consommateurs. Néanmoins, à l’heure actuelle le puzzle est incomplet car certaines pièces manquent. On ne sait pas prédire complétement comment à l’échelle moléculaire le processus d’agrégation est impacté par les modifications structurales initiales. Par ailleurs, il n’y a pas de relation connue indiquant comment les modifications structurales impactent l’encrassement à l’échelle pilote et quels sont les paramètres procédés clés à imposer pour contrôler à la fois la viscosité et limiter l’encrassement. UMR UMET and Ingredia have created the joint Proteinolab laboratory (AAP ANR LabCom 2017 which aims to develop innovative dairy protein isolates used as functional ingredients (commercialised as powders) in hyperprotein (HP) applications in the food and nutrition field. (development of muscle mass, satietogenic effect, sarcopenia, muscle melting, clinical nutrition).LabCom’s work has shown that changes in protein isolates can lead to different distribution and properties of aggregates and sometimes to a decrease in viscosity, facilitating consumer ingestion of these drinks. Nevertheless, at present the puzzle is incomplete because some pieces are missing. It is not possible to fully predict how the aggregation process at the molecular scale is impacted by initial structural changes. On the other hand, there is no known relationship to how structural changes impact the soiling at the pilot scale and what are the key process parameters to be imposed to control both viscosity and limit soiling.
