    Le présent projet concerne concrètement la construction de la qualité des vins de Bourgogne au travers de programmes transdisciplinaires impliquant non seulement les sciences expérimentales (physiologie, microbiologie, climatologie, physico-chimie, analyses sensorielles…) mais également les sciences humaines et sociales (communication, histoire, sociologie, linguistique, économie…). Ce positionnement est unique en France par son ambition fédérative conjuguée à la création d'un pôle régional de compétences et à l'identification du domaine vigne et vin parmi les priorités de spécialisation pour l'Université de Bourgogne.
