The main objective of this project “CITRICS & flavonoids ENRICHED Extracts” is the creation of a new natural ingredient with high flavonoid content from citrus products, specifically developed according to the physical-chemical, nutritional improvement and organoleptic needs of the application matrix. The project is aimed at selecting the citrus varieties with a profile in flavonoids qualitatively and quantitatively of interest to be used as raw materials for the generation of the new ingredient rich in flavonoids and its subsequent validation in a food matrix._x000D_ _x000D_ In this sense will work the present consortium of companies led by ZUVAMESA, combining efforts and experience to achieve the following goals:_xD___xx___x_N_N. • To develop in a specific manner of the production of edible oils _ high quality of application, new natural ingredients from the cleavage from the different varieties to be selected at the same time as those of the varieties of origins from the end of the production, the same quality of the product of the application, the new natural ingredients from the different varieties to the different varieties.     El presente proyecto “CITRICS & FLAVONOIDS ENRICHED EXTRACTS” tiene como objetivo principal la creación de un nuevo ingrediente natural con alto contenido en flavonoides proveniente de productos cítricos, desarrollado específicamente en función de las necesidades físico-químicas, de mejora nutricional y organolépticas de la matriz de aplicación. El proyecto está orientado a seleccionar las variedades de cítricos con un perfil en flavonoides cualitativa y cuantitativamente de interés que serán empleadas como materias primas para la generación del nuevo ingrediente rico en flavonoides y su posterior validación en una matriz alimentaria._x000D_ _x000D_ En este sentido va a trabajar el presente consorcio de empresas liderado por ZUVAMESA, aunando esfuerzos y experiencia para conseguir alcanzar las siguientes metas:_x000D_ _x000D_ • Desarrollar de forma específica para su matriz alimentaria de aplicación, nuevos ingredientes naturales a partir de diferentes variedades de cítricos que eleven la condición de naturalidad del producto final a la vez que mejoran el perfil nutricional del mismo._x000D_ _x000D_ • Caracterizar nutricionalmente las variedades de naranja y clementinas/mandarinas de toda la campaña citrícola desde el punto de vista de contenido de flavonoides en aras de seleccionar aquellas que presenten las mejores cualidades nutricionales y saludables para el consumidor._x000D_ _x000D_ En este Proyecto en cooperación se consigue una fuerte integración vertical, ya que en el mismo colaboran expertos en la producción, manipulación, conservación postcosecha y distribución en fresco de cítricos como expertos en la transformación de los mismos en zumos no procedentes de concentrado (NFC) de elevada calidad y producción de subproductos de alto valor añadido (celdillas, aceites esenciales, D-Limoneno, pellets).
