Proyecto para investigar en la reducción de azúcares en helados artesanales tipo crema y sorbetes, planteándose un diagnóstico de situación inicial a nivel cualitativo y cuantitativo para a continuación comenzar a estudiar las posibles estrategias de de formulación y procesado de helados crema y sorbetes sin azúcares añadidos o de bajo contenido en azúcares, de acuerdo al Reglamento 1924/2006, de 20 de diciembre de 2006. Por último se validarán las formulaciones y procesos optimizados a nivel organoléptico, físico-químico y microbiológico. (Spanish)

Project to investigate the reduction of sugars in homemade ice cream and sorbets, considering a diagnosis of the initial situation at a qualitative and quantitative level, and then begin to study the possible strategies for the formulation and processing of ice cream and sorbets without added sugars or low in sugars, in accordance with Regulation 1924/2006 of 20 December 2006. Finally, the formulations and processes optimized at organoleptic, physical-chemical and microbiological level will be validated. (English)
